PASTRY CHEF / CAKE DECORATOR – SPECIALIST BAKERY

No Split shifts - Mon to Fri*

We’re an established and dedicated gluten free bakery looking for an experienced Pastry Chef / Cake Decorator with the skill set, passion and high standards to produce existing and new products for our wholesale customers (cafes/delis) private customers and our flagship retail stall at Borough Market.

We have a vacancy for an experienced Pastry Chef/Cake Decorator. It’s a Full-Time role (Mon to Fri – 9:5/30*) and you should have a minimum of 2-3 years related experience to join our small busy team. The role is available now. We cannot take on applicants who need sponsorship or can only work 20 hours on a student visa.

You’ll divide your time into 50% baking, 50% decorating. The role would suit someone who has worked in a commercial patisserie environment (not just a bread bakery). Please do not apply if you have just been baking breads. You will be solely responsible for decorating our cakes in a... contemporary and creative manner.

Previous cake baking & decorating experience in a commercial environment (not home baking) is essential however we will provide training on all aspects of gluten free and vegan baking.

The candidate we’re looking for will demonstrate experience in the following duties:
• Follow our established recipes and baking simple bakes e.g cupcakes, sponges (experience of ‘free-from’ baking is not essential)
• Create production schedule to ensure your products are baked & decorated in time for customers’ orders
• Monitoring stock levels of cakes and related ingredients
• Preparing a range of covers from frostings using vegan ‘cream cheese’, ganache, syrups, caramel and curds and ensuring enough is pre-prepared in advance to timely fulfil orders
• Using the same to (decorate) mask and finish our range of gluten free, dairy free & vegan layer cakes and cupcakes
• Your decorating skills should cover:

- Excellent hand piping and pallet knife skills in a variety of styles

- Ideally some experience with vegan/non-vegan frosting/buttercream, ganache or icing

- Exceptional attention to detail

- Be able to decorate multiple & variable cakes each day in a timely manner

- Being creative with 'finishing' cakes ensuring customer allergens are adhered to
• Have passion for what you bake, with attention to detail and high standards

You will:
• Liaise with Head Pastry Chef to ensure cakes prepared to schedule
• Work calmly and quickly when piping cupcakes and masking layer cakes whilst maintaining high quality of appearance
• Be very organised, with an efficient approach to work
• Be able to plan/prioritise workload based on orders and delivery schedule
• Have a keen eye for detail and a passion for decorating & baking with high standards – consistency is key
• Can work under pressure (with a smile) to meet deadlines and be flexible with time
• Bring decorating, recipe and flavour ideas to the table
• Be prepared to undertake certificate in Food Hygiene/Health Safety if not already in place
• Monitor ingredient/stock levels so enough is available for your use
• Package cakes for customers and market as needed.

You do not need to have experience in fondant, sugar modelling, gum paste & royal icing as we don’t use this decorating style.
• we offer flexible shifts so on busier days you’ll be expected to finish later to ensure orders fulfilled but can leave earlier if quiet. From Mid-November to Christmas, you will be expected to work some extra hours or the occasional Saturday to fulfil Xmas baking/decorating demands. **applicants who can start sooner rather than give a month's notice will be given priority

Location: SW11 5QL.
